Ingredients

1 large potato, peeled

1/2 onion (medium) chopped

1 tomato (medium) chopped

3 jalapeno peppers chopped or

bell pepper chopped or

green chile pepper chopped

olive oil

Kosher salt for seasoning

pepper

Preparation

Cut potato into strips and place in a plastic bag. Cut or poke holes into bag. Microwave potatos for 5 minutes.

Place potatos, tomato and onion into hot skillet covered with oil. Add kosher salt and fresh ground pepper. Cook until onions caramelize and potato browns.
