Ingredients
1 1/2 lbs turkey sausage
2 cans black beans undrained
1 cup white rice
2 cups low sodium chicken broth
1-2 tablespoons olive oil
1 1/2 cups chopped onion
3/4 cup carrots chopped
3/4 cup celery chopped
1 1/2 cups red bell pepper chopped
2 garlic cloves or shallots minced
1 cup sherry, wine, or beer.
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon chipolte chili powder
1 tablespoon oregano
2 teaspoons cilantro
2 tablespoons honey
1/2 teaspoons salt
1/2 teaspoon cinnamon
1/8 teaspoon pepper
2 cans (140z) diced tomatoes
1 bay leaf
Preparation
Heat oil in a large sauce pan, add onion, carrots, celery, red pepper, and garlic. Saute 7 minutes or until softened. Add remaining ingredients bring to a boil. Reduce heat and simmer about 30 minutes. Remove bay leaf and serve with sour cream and tortilla chips.
