Ingredients

1 medium jicama,peeled and grated

1 medium/large sweet potato, peeled and grated

2 carrots, peeled and grated

1/2 small red onion, chopped fine

2/3 cup fresh cilantro, chopped coarsely

1 red pepper, chopped into bite size chunks

1/4 to 1/2 finely chopped,seeded fresh jalapeno

1 to 1 1/2 cups light salad dressing

1/2 tsp. cumin

1/2 tsp. chili powder

salt and pepper to taste

Preparation

Combine all chopped and grated items in large bowl. Mix in salad dressing, adding more if needed to get appropriate “coleslaw” consistency. Add spices. Stir well. Best if left in fridge at least 2 hours to chill completely.
